Beef Cheek Pot Roast

Ingredients

  • 1 pound meat cut into cubes 2×2 cm each (6 servings)

  • 1 celery root, diced

  • 1 celery stick, diced

  • 2 white carrots, diced

  • 2 orange carrots, diced

  • 1 small leek, cut into thin rings

  • 1 small onion or 2 shallots, diced

  • 1 tsp Italian herbs

  • ½ tsp black pepper

  • 1 tsp salt

  • 2 tbsp olive oil

  • 2 cups beef broth

Instructions

  1. Fry meat in a pot with olive oil on all sides on high heat.

  2. Remove meat from pot and keep warm.

  3. Add the vegetables and spices to the pot and fry for a few minutes until slightly softened.

  4. Add the meat and the broth, bring to a boil.

  5. Reduce heat to low, cover the pot and cook for about 3-4 hours until meat is very soft.
