Black Eye Pea Pods

Ingredients

  • Black eye pea pods (1 pound)

  • Onion (1/2)

  • Garlic (3 cloves)

  • Crushed Tomatoes (1/2 can)

  • Canola oil

  • Salt

  • Pepper

Preparation

  • Wash the pea pods.

  • Chop edges off of pea pods.

  • Cut pea pods into 1 inch segments.

  • Chop onion

  • Mince garlic

  • Fry onion and garlic with oil until it is golden-transparent.

  • Add the pea pods to the pan and wait until it is thoroughly cooked.

  • Add tomatoes, salt, and garlic.

  • Cook for another 5 minutes.
