Garlic-Ginger-Apple Stir-Fry

A bright, crisp side dish combining natural sweetness of apples with aromatic garlic and ginger.

Ingredients

Fresh Produce

  • 450g Granny Smith apples (approximately 3 medium)

  • 30g fresh ginger root (approximately 6cm piece)

  • 15g fresh garlic (3 large cloves)

Oil

  • 15ml olive oil (1 tablespoon)

Method

Advance Preparation

  1. Prep Aromatics (can be done 30 minutes ahead)

    • Peel and mince ginger into very fine pieces

    • Peel and mince garlic to similar size

    • Combine and let rest 10-15 minutes

  2. Prep Apples (do just before cooking)

    • Cut each apple into quarters, remove core

    • Slice each quarter into 3mm thick pieces

    • Pat apple slices dry

Cooking Process

  1. Heat wok or skillet over medium-high heat (approximately 375°F/190°C)

  2. Add olive oil, swirl to coat

  3. When oil is shimmering, add ginger-garlic mixture

  4. Stir constantly for 15-20 seconds until fragrant

  5. Add apple slices, toss quickly to coat

  6. Stir-fry for 2-3 minutes until crisp-tender

  7. Transfer immediately to serving dish

Notes

  • Makes 4-6 side dish servings

  • Total active cooking time is under 5 minutes

  • Best served fresh

  • Can use Pink Lady or Honeycrisp if Granny Smith unavailable
